Bourke Street Bakery Introduce
Introduction / Overview
Bringing a slice of Sydney’s vibrant cafe culture to the heart of Manhattan, Bourke Street Bakery has become a cornerstone of the NoMad neighborhood since opening its doors in 2019. Originally founded in 2004 on a small corner in Surry Hills, Australia, this world-renowned bakery made its international debut at 15 E 28th St, quickly earning a spot on the "essential" lists of New York food critics. The bakery is more than just a place to grab a quick pastry; it is an artisanal temple dedicated to the craft of handmade, from-scratch baking. Whether you are a local resident or a professional working in the district, the aromatic scent of fresh-baked sourdough and buttery puff pastry provides a welcoming escape from the city's frantic pace.
The spirit of Bourke Street Bakery is rooted in a chef-led approach to baking. Founders Paul Allam and David McGuinness transitioned from professional kitchens to the world of flour and yeast, bringing a high level of culinary technique to everyday staples. Their commitment to quality is so profound that they even brought their original sourdough starter—affectionately named "Frank"—all the way from Australia to ensure the NYC loaves carry the same legendary tang and texture. Today, the NoMad location serves as a community hub where the "Aussie" lifestyle of slow-fermented breads and robust coffee meets the high-energy demands of New York City, creating a cozy yet professional environment that feels like a home away from home.
Location and Accessibility
Bourke Street Bakery is ideally situated at 15 E 28th St, New York, NY 10016, placing it right on the pulse of the NoMad (North of Madison Square Park) district. This central location makes it exceptionally accessible for a wide variety of patrons. Nestled between Madison Avenue and 5th Avenue, it is a convenient stop for those exploring the historic Flatiron district or taking a break from the commercial bustle of Midtown South. The shop is housed in the historic Beaux-Arts building formerly known as the Hotel Seville, now The James Hotel NoMad, which adds an air of architectural elegance to your morning coffee run.
For those relying on public transit, the bakery is a commuter's dream. It is just steps away from the 28th Street subway station, served by the 6 train, and only a short walk from the N, R, and W lines at the 28th Street-Broadway station. This ease of access ensures that a fresh loaf of sourdough or a warm meat pie is never more than a few minutes away. While the bakery is optimized for high-volume takeout to serve the local workforce, the interior features a beautifully designed 2,000-square-foot space with a mix of community tables and window seating. The open-plan design allows guests to watch the bakers at work, creating a transparent and engaging experience that is accessible to everyone from solo remote workers to groups of friends meeting for a weekend brunch.

Features / Highlights
What makes Bourke Street Bakery a standout destination in the competitive New York bakery scene is its unique blend of Australian heritage and premium craftsmanship. Key highlights include:
- The "Frank" Sourdough: Every loaf of sourdough is made using a culture that has been alive for over 15 years, resulting in a depth of flavor and "bouncy" texture that is hard to find elsewhere.
- Award-Winning Sausage Rolls: Their Pork & Fennel sausage roll is a global icon, featuring high-quality ground pork and aromatic seeds encased in layers of flaky, golden puff pastry.
- Aussie Coffee Culture: As an Australian-born shop, they specialize in the "Flat White," served with a smooth, rich crema and perfectly textured milk.
- Unique Interior Design: Designed by GRT Architects, the space features warm cherry wood, cork paneling, and a salmon-colored concrete floor designed to evoke the sunnier climes of Sydney.
- Handcrafted Detail: Almost everything is made by hand, from the milling of certain grains to the slow-cooking of the brisket used in their hearty meat pies.
- Dietary Inclusivity: The menu includes thoughtfully prepared vegetarian and vegan options, such as the Eggplant, Chickpea, Mint & Feta roll and the Spiced Veggie Vegan pie.
- Historic Setting: Located within a landmarked Beaux-Arts building, providing a sophisticated backdrop for your daily breakfast.

What is worth choosing
If it is your first time visiting Bourke Street Bakery, you simply cannot leave without trying the Pork & Fennel Sausage Roll. It is the item that put them on the map in Sydney and remains their most popular savory treat in New York. The contrast between the aromatic, juicy pork filling and the impossibly flaky, buttery pastry is a masterclass in texture. For an authentic experience, be sure to pair it with a dollop of their house-made tomato ketchup, which offers a tangy, rich compliment to the savory meat.
For those seeking a more traditional New York breakfast with an Aussie twist, the Chicken Cheddar Sandwich or the Ham & Swiss Croissant (best enjoyed toasted) are exceptional choices. The bakery’s sourdough program is also a must; the Seedy Sourdough is highly praised for its robust crust and flavorful interior, making it the perfect loaf to take home for your morning toast. On the sweet side, the Blueberry Ricotta Muffin has been a fan favorite since 2004, celebrated for its moist, cake-like crumb and fresh fruit bursts. Finally, ensure you order a Flat White—it is the quintessential Australian coffee and arguably the best way to experience their high-quality espresso program. Whether you’re stopping in for a "mid-week coffee break" or a hearty weekend pie, choosing any of their signature "Frank-leavened" items ensures you are getting a true taste of artisanal mastery.
Would you like me to find the current seasonal pie flavor available at the NoMad shop, or perhaps help you set up a catering order for your next office breakfast?

Amazing bakery! The chicken sandwich was absolutely delicious — fresh, flavorful, and perfectly made. The coffee was excellent, rich and smooth. Great vibe inside, cozy and welcoming atmosphere. Definitely a place I’ll come back to. Highly recommend! ☕🥪

Great sausage rolls. Turkey croissant sandwich was a tad dry. the blueberry danish was very good. The pastry itself is great, but the mustard and mayo packets they have from Mikes are AMAZING. Coffee is mid - was expecting better coffee from an aussie place. not bad tho.

As someone who had lived in Melbourne before, I find the Aussie beef pie and sausage roll here to be absolutely delightful: juicy and flavorful with hearty proportions. So very glad to have found this place. Will come back for sure.

I don’t like their pastries. I ordered a croissant last time but it was stale. The interior is very dark and the service is not very welcoming. However, their hot cross buns are fantastic. This Aussie chain bakery is known for rolling out hot cross buns every year. Their chocolate flavor is a standout this year. It is piped with chocolate icing and filled with chocolate chips. It really impresses me from all the other regular flavored hot cross buns. FYI this is also the most expensive hot cross bun I’ve gotten. $5.17 after tax.

Went there during the Great Blizzard of 2026. Was assisted by Erin who was very kind, knowledgeable and courteous. Wanted something freshly made after shoveling, and remembered this great bakery nearby that definitely satisfied our tired and empty stomachs! Thank you for being open! Very tasty, and fresh! Flakey pastries, will be back!
