When I learned that the former head baker of Maison Kayser opened a bakery, I knew I had to check it out. As soon as I opened the door, I felt that Maison Kayser certainly lives on: the cookies, the chaussons, they all looked so familiar. Yes, the space is much smaller, but the same spirit is there. I was one of the many folks who were devastated by the bankruptcy and closure of Maison Kayser in NYC. I came from an area without many French bakeries save for Maison Kayser’s global presence. It’s the flavor I looked forward to for a fancy weekend treat (really, New Yorkers are spoiled by so much choice!), especially the walnut chocolate chip cookie. Everyone has their own ideal cookie.
