4/12/2023, Wed.: Hawthorne Valley Farm and Bakery which are beyond organic and are biodynamic is at the Union Square Greenmarket year-round with greens in the spring, summer and fall, on Wednesdays and Saturdays. Most of the loaves of breads are sourdough (and all organic), and Hawthorne Valley actually grows their own Rye. The vegan walnut chocolate chip cookie and the cinnamon buns use whole wheat pastry flour. The 100% sourdough spelt and rye loaves are among the densest breads I have ever eaten and are fermented for over 24 hrs. The farm is usda certified organic, but beyond this and doesn't even use any certified organic sprays. Hawthorne Valley is also known for their vegetarian rennet raw cow's milk cheeses, with many in the alpine style of cheese making where the cow's milk is again beyond organic. - 5/6/2023, Sat: Pictures of vegan chocolate walnut whole wheat + wheat cookie, and the sourdough sunflower flax whole wheat + wheat roll.
