She Wolf Bakery - Union Square Introduce
For those who navigate the bustling pathways of Manhattan’s Union Square, there is a distinct aroma that often cuts through the city air—the deep, earthy scent of naturally leavened sourdough. She Wolf Bakery has become a cornerstone of the Union Square Greenmarket, representing a return to principled, patient bread-making. Originally born out of the wood-fired ovens of Roman’s in Brooklyn, She Wolf has grown into one of New York City’s most respected artisan bakeries. For local residents and the city's top chefs alike, this stand is not just a place to buy bread; it is a destination for those who value the restoration of the Northeast grain-shed and the complex flavors that only long fermentation can provide.
The philosophy of She Wolf Bakery is rooted in a commitment to local agriculture and organic practices. By sourcing grains and butter from New York State farmers, they ensure that every loaf supports the regional food system while delivering superior nutrition and taste. In a city where quick and processed options are everywhere, She Wolf stands out by using stone-milled flours and traditional sourdough cultures. This dedication to craft has earned them accolades, including being a James Beard Foundation semi-finalist, but for the average New Yorker, the real reward is found in the thick, dark crust and the chewy, flavorful interior of their signature loaves. Whether you are a dedicated home cook or simply a lover of fine baked goods, a visit to their Union Square stand is a quintessentially New York experience.
Location and Accessibility
She Wolf Bakery operates as a featured vendor within the Union Square Greenmarket, located at the iconic Union Square West. This central Manhattan location makes it one of the most accessible spots in the city for high-quality bread. Because it is an outdoor market stand, it is perfectly integrated into the pedestrian flow of the neighborhood, allowing commuters and residents to easily incorporate a bakery run into their daily routine. The market itself is a vibrant hub where the energy of the city meets the bounty of regional farms, providing a scenic backdrop for your morning or afternoon shopping.
For those traveling from other parts of the city, accessibility is unmatched. The Union Square-14th Street subway station is one of New York’s major transit hubs, serving the 4, 5, 6, L, N, Q, R, and W lines. This means that no matter where you are coming from—the Bronx, Brooklyn, or Queens—you are only a short train ride and a few steps away from fresh sourdough. Additionally, multiple bus lines, including the M1, M2, M3, and M14, stop within a block of the market. It is important for locals to remember that as a Greenmarket vendor, She Wolf follows a specific schedule at this location, typically appearing on Mondays, Wednesdays, and Fridays. To get the best selection, arriving early is highly recommended, as their most popular loaves often sell out by the afternoon.

Features / Highlights
She Wolf Bakery is defined by several key features that have garnered a loyal following across the five boroughs. These highlights include:
- 100% Sourdough Culture: Almost all breads are naturally leavened, which enhances digestibility and creates the signature "She Wolf" sour profile.
- Locally Sourced Grains: Utilizing over 150,000 lbs of New York State grain and butter annually to support regional farmers.
- Long Fermentation Process: A patient approach to baking that allows yeast and bacteria to pre-digest the flour, making B vitamins and minerals more bioavailable.
- Stone-Milled Flour: Many loaves feature whole grains that are stone-milled to preserve the integrity and flavor of the wheat, rye, and spelt.
- Rotating Produce Integration: Their daycakes and specialty items change with the seasons, utilizing fresh fruit and vegetables available at the market.
- Diverse Variety: From the dense Sprouted Rye to the airy Pizza Bianca, the menu caters to a wide range of textures and flavor preferences.
- Sustainable Practices: A focus on a regional food system that reduces transport miles and supports organic agricultural methods.

What is worth choosing
If you are visiting She Wolf for the first time, the "Miche" is an absolute requirement. This large, dark-crusted sourdough loaf is made with whole wheat and rye, offering a complex, nutty flavor that stays fresh for days thanks to its size and fermentation. It is the gold standard for a hearty table bread. For those who enjoy a bit of texture and umami, the Toasted Sesame Wheat is a local favorite. It is essentially the miche dough loaded with and coated in toasted sesame seeds, creating a savory experience that is excellent when toasted with a bit of butter or used for a sandwich.
For something slightly different, do not overlook the Sprouted Rye. This German-style loaf is incredibly dense, packed with whole grains and a touch of barley malt syrup for a deep, grassy sweetness. It is particularly addictive for those who prefer a more robust, "black bread" style. If you are in the mood for something sweet, the "Daycake" is the winner. Because it uses rotating seasonal produce—like ginger, apple, or berries—it is a fresh surprise every time. The sunflower millet biscotti also receives rave reviews for its perfect crunch and balance of salt and sugar. Finally, if you see the Polenta Pullman, grab it; the toasted polenta "mash" inside gives the bread a unique sweet-corn flavor and a gentle crunch that is unlike anything else in the market. No matter your choice, make sure to get there early—in the world of She Wolf bread, the early bird gets the sourdough.
In summary, She Wolf Bakery at Union Square is a vital part of New York’s modern culinary identity. It proves that with the right ingredients and enough patience, bread can be both a staple and a luxury. For any local user looking for a real taste of the Northeast, this greenmarket stand is an essential stop on the map.

4/12/2023. Wed: The highly regarded She Wolf Bakery is at the Union Square Greenmarket on Mondays, Wednesdays, and Fridays, and often sells out of many if not all of their sourdough loaves of bread and day cakes by the afternoon. All of the breads are sourdough, and many use whole grains, and the grains are locally sources and organic. The price can seem expensive, but the loaves can be large and dense, and are very nutritious and flavorful, and have served many fine restaurants for years. The ingredients are all given on She Wolf's website. The whole grain breads include the Miche (whole wheat), toasted sesame (whole wheat), multigrain pullman, and sprouted rye. The daycake is "A lightly-sweetened snacking cake with rotating produce and organic flour", with ingredients sourced from the greenmarket. - 4/17/2023, Monday: pictures of sesame seed whole wheat organic, locally milled sourdough loaf (among my favorite loaves of the market), and the day cake and biscotti baked goods, all great tasting with healthy local organic whole grains and very fresh.

JEWS BEWARE!! ANTISEMITIC SERVERS. (This refers to the Columbia University farmers market She Wolf stand). I’ve been buying my bread from the She Wolf stands here and in Union Square for over a year. I went yesterday and both the servers were wearing Palestinian solidarity attire— the Keffiyah scarf and the other had a Palestinian Irish solidarity pin. After ordering my bread I noticed this as well as the Irish Palestinian pin wearing one glaring at me and the Jewish Star of David I was wearing around my neck. They did not say a word to me and barely acknowledged me. The next customer who came up they were friendly etc.. I hope this is NOT true for the bakery overall. These servers are clearly antisemitic so I suggest you avoid them.

Heard they had great bread so I thought id give it a try even though it seemed extremely overpriced. Unfortunately the wholegrain Pullman is probably some of the worst bread I’ve ever had and even worse was the extremely unfriendly man who “helped” me. What a waste of $13
