PopUp Bagels Introduce
In the fiercely competitive world of New York City breakfast, where traditionalists and trend-seekers often clash, PopUp Bagels has carved out a unique and celebrated niche. Located at 20 E 16th Street, just a stone's throw from the bustling greenery of Union Square, this shop has redefined what it means to grab a bagel in Manhattan. Rather than the standard sliced-and-smeared sandwich, PopUp Bagels champions a "rip and dip" philosophy that prioritizes the sensory experience of a bagel caught at its absolute peak: steaming hot, incredibly fluffy, and fresh from the oven.
What began as a backyard project has transformed into a culinary phenomenon that locals and visitors alike are willing to wait for. The allure lies in the simplicity and the quality of the bake. These aren't just bagels; they are gold-standard specimens of dough with a thin, crispy exterior and an airy, cloud-like interior. The shop operates with a distinct modern energy, focusing on a limited daily production that ensures nothing ever sits on a shelf. For the New York user, it offers a departure from the "deli" vibe in favor of a specialized bakery experience that treats the bagel as the main event rather than a vessel for cold cuts. It’s professional, fast-paced, and undeniably addictive.
Location and Accessibility
PopUp Bagels is perfectly situated at 20 E 16th St, New York, NY 10003, USA. Positioned between 5th Avenue and Union Square West, it is in one of the most transit-accessible neighborhoods in all of New York City. For those commuting or exploring, the shop is only a three-minute walk from the 14th St-Union Square station, a major hub for the 4, 5, 6, L, N, Q, R, and W trains. This makes it an ideal stop for residents of the East Village, Chelsea, and Greenwich Village alike.
The shop’s street-level presence fits seamlessly into the historic architecture of the 10003 zip code. While the interior is optimized for quick efficiency—with limited counter space and a "takeaway first" design—the nearby parks, including Union Square and Paley Park, provide excellent scenic spots to enjoy your haul while it’s still steaming. For those navigating the city by bus, the M1, M2, and M3 lines run frequently nearby on 5th Avenue and University Place, providing multiple layers of accessibility for every type of local user.

What is worth choosing
If you are making your first pilgrimage to PopUp Bagels, the 3-Bagel & Schmear combo is the essential starting point. While all their bagels are excellent, the Everything and the Salt varieties are widely considered the best for showcasing the "rip and dip" style. The Everything bagel is a "flavor bomb" of perfectly balanced toppings, while the Salt bagel offers a clean, punchy contrast to the creamy dips. For those who appreciate texture, the Poppy seed bagel provides a delightful crunch that pairs exceptionally well with their fluffier cream cheeses.
The real star of the show, however, is the "Schmear of the Week." It is always worth trying whatever specialty butter or cream cheese is currently on the menu, as these limited-run flavors are where the shop’s creativity truly shines. Regulars often rave about the Scallion Cream Cheese for its classic reliability, but the Buffalo Butter and any of their roasted pepper varieties are must-tries for those seeking a more adventurous profile. If you are a fan of unique pairings, look out for their collaboration flavors—items like the Jalapeño cream cheese (which manages to capture the flavor of the pepper without overwhelming spice) have earned legendary status. Because these bagels are best enjoyed immediately, choosing a 3-pack to share with a friend while standing near the Union Square fountain is a quintessential NYC experience that proves why this shop remains at the top of the local conversation.

Best bagel I’ve ever had! So worth the hype online. The shmears I believe could be more simple: less is more. But I did like the buffalo butter. (: also saw someone use their leftover for cooking, multipurpose!

So hot, fluffy, and fresh! I was worried this location wouldn’t be as good as the first nyc location, but I was not disappointed! Popup is my still my #1

I was disappointed with my experience here. There’s a minimum order of three bagels, which isn’t clearly emphasized upfront, and the pricing feels high for what you receive. They promote a “rip & dip” experience instead of assembling the bagels for you, which might be novel to some, but it’s mostly inconvenient. If I’m paying premium prices, I expect a fully prepared bagel. They also market the bagels as “fresh out of the oven,” but they were sitting in a basket like most standard bagel shops. Nothing about the presentation suggested anything especially fresh or elevated. For the price and concept, it didn’t feel worth it. I’d rather support a local bagel shop. In a city like NYC, where you can find an excellent bagel on almost every block, it’s hard to justify this kind of experience.

Bagels are really good as my work has gotten them a few times, but I went in just to grab breakfast because they’re delicious and no way I was told I have to buy a minimum of 3 bagels! Really poor customer experience! Change that and I’d love to give more business!

My favorite bagels! When a catering order for my office was subpar, PopUp Bagels stepped in and saved the day! My colleagues always love to see breakfast from PopUp. The limited edition butters and schmears are incredible. THANK YOU!
