The Bakery at Greywind Introduce
In the rapidly evolving landscape of Manhattan’s West Side, specifically the area bordering the high-tech marvel of Hudson Yards, finding a quiet, artisanal sanctuary can feel like discovering buried treasure. The Bakery at Greywind is exactly that—a sophisticated, cozy, and highly intentional culinary destination that shares its DNA with the acclaimed Greywind restaurant. For New Yorkers who work in the nearby glass towers or residents of the burgeoning West 35th Street corridor, this bakery has quickly transitioned from a "new find" to an essential daily ritual. It represents the perfect intersection of high-end restaurant craft and the approachable comfort of a neighborhood bake shop.
Entering The Bakery at Greywind is an experience in modern New York hospitality. While the city is often characterized by its frantic pace, this space offers a "quiet, lovely" reprieve. The aesthetic is polished yet warm, reflecting the seasonal and earth-toned sensibilities of Chef Dan Kluger’s broader Greywind concept. It is a place where the scent of fresh-baked sourdough and roasting coffee beans creates an immediate sense of home. For those navigating the bustle of 10th Avenue, stepping through the doors at West 35th Street feels like entering a well-kept secret, where the quality of the product is matched only by the delight of the staff.
Introduction / Overview
The Bakery at Greywind isn't just another coffee shop; it is a laboratory of flavor where traditional techniques meet innovative New York twists. The bakery is renowned for its commitment to freshness and seasonality, a philosophy that extends from its pastry cases to its coffee bar. Unlike many commercial bakeries that rely on standardized recipes, Greywind focuses on unique textures and bold flavor profiles, such as their spicy tomato and ricotta buns or their adventurous ginger cookies. This commitment to "different" is what keeps local workers and commuters coming back, often finding themselves "thinking about it" on their way into work.
The service model here is deeply personal. Regulars are greeted by a staff described as "a delight," creating a community atmosphere that is often missing in the more corporate stretches of Midtown. Whether you are stopping in for a quick cold brew or looking to treat yourself to a mid-morning pastry, the environment encourages you to pause. The bakery also serves as a showcase for the restaurant’s high culinary standards, often dishing out batches of classic New York staples, like black and white cookies, while they are still warm from the oven. This focus on "just-out-of-the-oven" quality is a hallmark of the Greywind experience.

What is worth choosing
If you are visiting The Bakery at Greywind for the first time, your selection should begin with their most talked-about item: the bacon, egg, and cheese "BAO." This isn't your standard deli sandwich; it is a phenomenal reimagining of a classic that utilizes the soft, pillowy texture of a bao bun to house savory breakfast essentials. It is described as a "daily" habit for those who work nearby, and for good reason—it is perfectly sized and expertly seasoned, making it a standout choice in a city of breakfast sandwiches.
For those with a sweet tooth, the cinnamon bun is non-negotiable. It has earned a reputation for being one of the freshest and most unique versions in New York. If you are looking for a cookie, the chocolate chip is a "good, well-done" option that emphasizes the "cookie" over the "candy," perfect for those who appreciate a toasted, buttery crumb. The sesame ginger cookie is another excellent choice for the adventurous, offering strong notes of both flavors with a great chew. To wash it all down, the coffee is essential. With their "superb" brews and house-made syrups, even a simple cold brew or latte feels like a luxury. If you happen to be there when they are dishing out a fresh batch of black and white cookies, do not pass them up—eating a New York classic while it is still warm is a rare and delightful opportunity.

What a gem! This bakery sharing space with the namesake restaurant is a quiet, lovely place near Hudson Yards. I had a cold brew (good), the spicy tomato and ricotta bun (ok - flavors were good, but the bun didn't quite match the intensity of the flavors...maybe if it was warm?), the chocolate chip cookie (good - a tad well-done, but I like that. Not chock full of chocolate for anyone looking for more candy bar than cookie...I like cookie more than candy so it suited me perfectly), and the sesame ginger cookie (strong notes of each flavor and a great chew to the cookie, but I'm not sure I love these two flavors together). Both cookies were just the right amount of sweet. It is really a lovely spot to grab a coffee and a treat.

I am in love. I work in Hudson yards, when I found Greywind's bakery - I couldn't stop thinking about it. Their coffee is superb, with home-made syrups and sweeteners based on the season. The pastries are to die for - the best, freshest, and most unique cinnamon bun in the city. Last but not least - their bacon egg and cheese "BAO" is phenomenal. I find myself thinking about it on my way into work - it is absolutely my daily. The staff are a delight, and I couldn't be happier with this bakery overall. Today I was there and they were dishing out a batch of black and white cookies - fresh.

I recently visited Greywind Bakery and was genuinely blown away by the quality, creativity, and kindness this place radiates. I ordered the almond milk latte with extra chocolate tahini sauce—and wow, it was next-level delicious. Rich, nutty, slightly sweet, and incredibly comforting. I also indulged in their dark chocolate tahini brownie, which was decadent and perfectly balanced, not too sweet, with that deep, satisfying cocoa flavor. The salmon salad was fresh and flavorful; I would love to see it with a few more additions like eggs or avocado to make it even heartier. The goat cheese spinach bun was flaky, buttery, and packed with savory goodness. The cold brew was smooth and refreshing—a solid pick for any coffee lover. And to top it all off, they surprised me with a complimentary croissant—a warm, flaky gesture that made my day. 🥐💛 The staff were incredibly kind and welcoming throughout. Highly recommend stopping by!

A quiet and cozy place for some quick breakfast or lunch. The Chicken Cesar Salad was tasty but a bit too salty. The cappuccino was mostly foam (more than half), not much actual coffee. The Chocolate pudding Croissant was just ok, not much flavor....

I can’t get enough of this baker! At first glance, their menu might seem small, but trust me—you quickly realize quality beats quantity once you take your first bite. Every sandwich and pastry bursts with flavor. I’m especially in love with the crispy eggplant and roasted chicken sandwiches—from the perfectly baked focaccia and baguettes to the sauces that tie everything together, each bite is pure bliss. And the dark chocolate brownie is soo good. It melts in your mouth, and you can really taste the tahini. It’s the best I’ve ever had, and I get one with every purchase! Also, I am such a tahini person and I love being able to add chocolate tahini to my lattes. A special shoutout to Joey, who makes every visit even better with his friendly and welcoming vibe. If you haven’t tried this place yet, do yourself a favor.
