UPDATE: So I went ahead and ordered from Fabrique on Fat Tuesday/Mardi Gras even though I was disappointed with the one I had initially, and as you can see on the second image on this review it's a lot better! Bun is fluffy, cream is great, color is spot on. It could have a bit more almond creme, but it's still enough to be nice. Thanks for the delivery to the Instagram office! Cosy cafe, but as a Swede with high standards, their Semla does not cut it. At an initial look, the size is great. Not too much, but still substantial, and the whipped cream looks smooth. However, it's.. grey?! Not sure if they just forgot to add egg when baking the buns, but looks a bit sad. When starting to eat, there are three things to observe: 1) the whipped cream is smooth, well done on that part. 2) the bun is not fluffy, actually closer to dry, making the whole Semla quite boring. 3) waaaay to little almond creme. A boring bun can be saved by a lot of almond creme, however there is a minimal amount in this one. Even if the bun was perfect I'd be disappointed. Overall this is a 2 or 3 on a scale of 5. The only reason it could be a 3 is because there are very few places that offer Semla in NYC. That said, if you're one of the few Swedish bakeries in town, you have a responsibility to represent the country in a better way than this. Especially when you charge an outrageous $9.5 for it. Back to the drawing board Fabrique, this is not good. Otherwise the cafe is cosy and the people working there seem friendly. - Andreas Rolén

Fabrique Artisan Bakery Introduce

In the bustling landscape of the New York culinary scene, where artisanal concepts often compete for attention, Fabrique Artisan Bakery stands out as a beacon of Scandinavian tradition. Originally hailing from Stockholm, this acclaimed Swedish stone oven bakery has successfully carved out a niche in Manhattan, bringing the "fika" culture—the Swedish art of the coffee break—to the heart of the city. For New Yorkers seeking a departure from the standard American pastry, Fabrique offers a sensory journey defined by the deep, earthy aromas of natural sourdough and the intoxicating spice of freshly ground cardamom. It is a place where time-honored methods meet modern urban style, providing a sophisticated yet ruggedly authentic experience for bread connoisseurs and casual dessert lovers alike.

The essence of Fabrique Artisan Bakery lies in its commitment to the "artisan" label. In an era of mass production, this bakery remains dedicated to the slow process. Their breads are leavened naturally and baked in traditional stone ovens, resulting in a crust and crumb that are difficult to replicate. For the local New York community, Fabrique serves as more than just a place to grab a quick bite; it is a destination where the quality of the ingredients and the integrity of the baking process take center stage. The atmosphere inside the bakery is meticulously curated to be both cozy and stylish, offering an aesthetic that feels like a direct transplant from a trendy neighborhood in Stockholm, perfectly suited for the discerning tastes of New York residents.

Location and Accessibility are primary advantages for this establishment. Situated at 348 W 14th St, New York, NY 10014, Fabrique Artisan Bakery occupies a prime piece of real estate at the crossroads of the Meatpacking District and Chelsea. This location is incredibly convenient for locals and visitors navigating the west side of Manhattan. It is a natural stop for those walking toward the Arte Museum or exploring the nearby High Line. Accessibility is excellent via public transportation, with the 14th Street subway station (serving the A, C, E, and L lines) located just steps away. Whether you are a local resident starting your morning with a fresh loaf of sourdough or a professional working in the tech and fashion offices nearby, the bakery’s position on a major crosstown thoroughfare makes it an easy and rewarding detour during a busy New York day.

The services offered at Fabrique Artisan Bakery reflect their focus on quality over quantity, ensuring that every item on the menu receives the attention it deserves. The staff is known for being friendly and welcoming, contributing to the "cosy cafe" vibe that many patrons appreciate. Their service offerings include:

  • Handcrafted production of traditional Swedish sourdough breads using stone oven techniques.

What is worth choosing at Fabrique Artisan Bakery? While the sourdough loaves are a staple for any local kitchen, the absolute highlight for many is the cardamom bun (Kardemummabullar). These buns are famous for their moist, fluffy interior and the aromatic punch of real cardamom seeds. If you are visiting during the early months of the year, particularly around February, it is worth inquiring about their Semla. This traditional Swedish treat features a cardamom-spiced bun, smooth whipped cream, and a rich almond creme center. While opinions on the perfect Semla can be high among connoisseurs, recent updates to their recipe have resulted in fluffier buns and perfectly balanced cream, making it a seasonal must-try for anyone looking for an authentic taste of Sweden in New York. For those simply stopping by on a long walk, a coffee paired with any of their fresh-baked cinnamon or cardamom rolls provides the perfect "fika" moment to recharge.

In conclusion, Fabrique Artisan Bakery brings a necessary touch of Scandinavian precision and warmth to the West 14th Street corridor. It is a place where the quality of the bread speaks for itself and the environment invites you to slow down and savor the craftsmanship. For New Yorkers who value authenticity and are tired of mass-produced baked goods, Fabrique is a destination that delivers an impressive, high-quality European experience right in the heart of Manhattan. Whether you are stumbling upon it by chance or making a dedicated trip for their seasonal specialties, the combination of fresh aromas, friendly service, and expert baking makes it a vital part of the local neighborhood fabric.
