Masa Madre Introduce
Introduction / Overview
In the quiet, residential pockets of Woodside, Queens, a culinary revolution is taking place—one centered around the ancient art of natural fermentation. Masa Madre, which translates to "sourdough starter," is far more than a typical neighborhood bakery. It is a specialized destination where traditional European sourdough techniques meet the vibrant, bold flavors of Latin American cuisine. For New Yorkers who have grown tired of overly processed, sugary breads, Masa Madre offers a refreshing return to artisanal basics. Every item produced in this kitchen reflects a commitment to quality, consistency, and a "not too sweet" flavor profile that has earned the shop a dedicated following among locals and commuters alike.
The bakery is the brainchild of restaurateur Jose Luis Flores, who has infused the menu with a unique multicultural identity. While sourdough is the backbone of their pastry program, the heart of the establishment beats for authentic Mexican and Central American staples. This duality makes Masa Madre a rare find in the New York region; it is a place where you can find a perfectly laminated almond croissant alongside a traditional Mexican Concha or a savory Guatemalan sourdough torta. It is a testament to the diverse spirit of Queens, proving that when high-level professional baking meets authentic street-food roots, the result is nothing short of incredible.
Location and Accessibility
Masa Madre is tucked away at 47-55 46th St, Woodside, NY 11377, USA. Located slightly off the main commercial drags, it is truly a "hidden gem" that rewards those who take the time to explore Woodside's side streets. The bakery is nestled in a quiet, tree-lined area that borders Sunnyside, making it easily accessible to residents of both neighborhoods. Despite its discreet location, it is relatively close to major transit options, including the 7 train at the 46th St - Bliss St station and various bus lines running along Queens Boulevard and Greenpoint Avenue.
When planning a visit, it is important to note that Masa Madre is primarily designed as a "to-go" establishment. While there is some seating available, the interior space is cozy and limited, making it better suited for a quick morning pickup or a lunch for one or two people rather than large groups. The atmosphere is bustling and welcoming, often filled with the aroma of fresh sourdough and simmering tamales. For those driving, street parking in this residential section of Woodside is generally more manageable than in the denser commercial centers of Queens, allowing for a convenient stop-and-go experience.

What is worth choosing
If you are a first-time visitor to Masa Madre, the absolute first thing you should reach for is their sourdough-based pastries. The Cinnamon Roll and the Concha are standout representatives of the bakery's skill. The Concha, in particular, is a local favorite; it is light, airy, and features a butter-sugar topping that melts in your mouth without being cloying. For those looking for something truly unique, the Passion Fruit Mango Tres Leches cake is highly recommended for its vibrant, tropical notes and moist texture.
On the savory side, the tortas are the stars of the show. If you want something warm and indulgent, the Pork Leg Torta is a hearty, rich option that won't leave you hungry. If you're in the mood for something fresh and distinct, the Swordfish Torta is a rare and delicious find in the Woodside area. Additionally, never leave without a tamale; the El Chapin (pork) tamale features pork that is moist and literally "melts in your mouth." Finally, for the bread purists, the sourdough loaves are a must-buy. Locals rave about the "tangy" and "rustic" quality of the bread, which utilizes a specialized starter with roots in Guatemala. Because of their popularity, these loaves tend to sell out quickly, so arriving early in the morning is the best way to ensure you can take a piece of Masa Madre's sourdough magic home with you.

This is an incredible local bakery. The prices are extremely fair, the quality is top notch, and the flavors are just perfect. The most amazing part of this bakery is the consistency. They use sour dough for most of their pastries, giving them a distinct almost rustic taste. The best compliment I can give the pastries here is that they are “not too sweet”. I can eat everything here without getting tired of them, and I pretty much have. In addition to their marvelous pastries, they also have delicious tamales and tortas. Their tortas are huge. Definitely filing as a meal. I love their El Chapin (pork) tamale. The pork is moist and melt in your mouth. My favorite tortas are the pork leg and the swordfish. The pork leg is great if you want something warm and rich, and the swordfish if you want something cold and fresh. As I said, all of the parties are amazing, but my favorites are the passion fruit mango tres leches cake, the cinnamon roll, the bullseye, and the cornbread.

Never skip the side streets when exploring new areas! Hidden in Woodside is one of the most amazing little neighborhood bakeries with mouthwatering pastries and breads. The owner and staff are very welcoming. Daniel took the time to explain the different offerings since I wasn't familiar with them. Masa Madre offers a variety of breads, pastries and desserts. I purchased several different pastries and they were all so good. The Concha was light, airy and not too sweet with a hint of vanilla and a butter sugar topping. It reminded me of a brioche in away, literally melts in your mouth. The Banderilla was just as delicious with a thin caramelized sugar glaze and its crispy puff texture. The Piedra reminded me of a dense hearty bread. It was filled with raisins, chocolate and had coconut shreds with a glaze on top. You can tell that everything is made daily with how fresh it is. Masa is more of a to-go place especially if you are a few people. There is seating but it is very limited. I am excited to go back and try one of their speciality breads. The customers before me were raving about the sourdough.

Hands down the best CONCHAS in NYC! When you arrive at the bakery, one of the first things that will catch your eye is the croissant-shaped door handle — such a fun touch. As soon as you step inside, you’re greeted by the incredible aroma of freshly baked pastries. They serve delicious coffee, a variety of pastries, and fresh bread (which they’ll happily slice for you). If you’re in the mood for something savory, they also offer tamales and sandwiches. I tried the concha, tamales, sourdough bread, and coffee — and loved every single item. Everything was fresh and flavorful. The space is cozy, best suited for one or two people if you plan to dine in.

I JUST WANT TO SAY THE FOOD HERE IS SOOOOOOOOOOOO FREAKING GOOD. The portions are incredible and the price is super affordable. The tamales are so soft, warm and not even a bit dry, super moist and super stuffed with meat/sauce. They also have a variety of breads and cakes. DEFINITELY RECOMMEND 10/10 service and experience. RUNNNN FOR THE tamales AND Champurrados. 😁 Cash discount toooo

This place has a criminally low amount of reviews for how good it is. Just further evidence businesses with a lot of reviews are paying Google for them. The pastries are good, the conchas are amazing, I love their Mexican chocolate croissant. Their beverages are great! And they've been reviewed by a multitude of newspapers and outlets, which are displayed on their walls.
