Popup Bagels Introduce
In a city where the bagel is more than just a breakfast staple—it is a cultural icon—standing out requires more than just a standard recipe. New York City is home to hundreds of legacy shops, but a new contender has captured the attention of locals and visitors alike by returning to the basics of what makes a bagel truly exceptional. Popup Bagels, located in the heart of Greenwich Village, has redefined the morning routine for many New Yorkers. By focusing on a "hot and fresh" philosophy, this shop has moved away from the traditional, often dense bagel and toward a version that celebrates texture and temperature. For anyone living in or visiting Manhattan, a trip to this Thompson Street location has become a modern rite of passage for those seeking the ultimate NYC breakfast experience.
The atmosphere at Popup Bagels is characterized by a "clean, cozy, and very welcoming" vibe that balances the high energy of New York with the comfort of a neighborhood bakery. While the shop itself is intimate and relatively small, it hums with the efficiency of a well-oiled machine. The experience is designed for the modern New Yorker who values both quality and time. From the moment you approach the storefront, you are greeted by the intoxicating scent of toasted seeds and warm dough. It is an establishment that prioritizes the sensory experience—the warmth of the bag in your hand, the crackle of the crust, and the richness of their unique schmears. It is this dedication to the "just-baked" standard that has turned a simple storefront into a viral sensation and a local favorite.
Location and Accessibility
Popup Bagels is situated at 177 Thompson St, New York, NY 10012, USA. This location is nestled in the historic and picturesque Greenwich Village, just a few blocks south of Washington Square Park. For residents of the Village, Soho, or NoHo, the shop is a convenient walking destination. Its central location makes it a perfect stop for those exploring the eclectic boutiques and jazz clubs that define this part of Manhattan. The neighborhood feel of Thompson Street provides a slightly more relaxed backdrop compared to the bustling main avenues, although the popularity of the shop ensures a lively scene throughout the morning and early afternoon.
Regarding transit accessibility, the shop is exceptionally well-connected to the rest of the city. It is within a short walking distance of several major subway stations, including the West 4th St-Washington Sq station (A, C, E, B, D, F, and M lines) and the Houston St station (1 line). This makes it an easy destination for commuters from Brooklyn, Queens, or Upper Manhattan. While there is often a line extending down the sidewalk, the shop has implemented a clever "line management" strategy. Staff members often take orders while you are still in queue, ensuring that by the time you reach the counter, the process is streamlined and fast. This efficiency is a hallmark of the Popup Bagels experience, proving that even the most popular New York spots can respect their customers' busy schedules.

What is Worth Choosing
When visiting Popup Bagels, the first thing to understand is that these bagels are designed to be enjoyed while they are still warm. If you are looking for the quintessential experience, the Sesame Bagel or the Everything Bagel are the gold standards. Both are coated generously with seeds and seasonings, providing a satisfying crunch that gives way to a pillowy, soft interior. The "Everything" seasoning is particularly well-balanced, offering savory notes that aren't overly salty, which perfectly complements the sweetness of the fresh dough.
However, the true secret to the Popup Bagels experience lies in the schmear. For those who want something truly indulgent, the Truffle Cream Cheese is an absolute must-try. It is frequently cited as one of the best in the city—rich, aromatic, and perfectly balanced so that the truffle flavor enhances rather than overpowers the cream cheese. If you prefer something more traditional, their regular cream cheese is equally impressive, noted for its smooth texture and fresh taste. Because the bagels are served warm, the cream cheese begins to melt slightly, creating a decadent and comforting texture that sets it apart from cold, pre-prepared sandwiches found elsewhere. Highly recommended by locals and food critics alike, this combination is the reason people are willing to wait in line. Whether you are grabbing a quick breakfast or a mid-day snack, choosing the classic sesame with truffle schmear is a decision you won't regret. This bagel shop was abit small but clean, cozy, and very welcoming. There were many bagel flavors to choose from, ranging from classic plain and sesame to more unique options. The bagels were fresh, warm, and had a great texture. It was crispy on the outside and soft on the inside. The spreads and toppings were flavorful and generous. The staff was friendly and quick, making the experience enjoyable. There was a long line to go inside but it did move very quickly. Overall, this bagel shop is a great place for a tasty breakfast or snack, and I would definitely visit again.

Don’t get intimidated by the lineup, they have a good strategy down where someone asks you what your order is in line, so by the time you’re at the cash you only have to pick your schmear (cream cheese) and pay. We got the sesame bagel and everything bagel with truffle and regular cream cheese. If you’re a fan of truffle, you absolutely need to try it. It so well balanced and not over powering, they definitely know what they’re doing. Also, i don’t know if the bagels are always this fresh or if we got lucky, but it’s probably one of my favourite bagel consistencies in NYC. They are also fairly priced. Highly recommend it !! Enjoy

TLDR: Phenomenal bagels with great texture and simple, top-tier schmears. Order ahead and eat them hot. 5/5. Found Popup Bagels through social and stopped in while visiting from LA. I didn’t realize you order by the set, with a minimum of three bagels. They also weren’t doing bacon-egg-cheese when I went, which I was craving, but the quality won me over. Line was moderate and moved fast. Online order pickup looks like the smarter move, especially if you want specific schmears before they sell out. We kept it simple with plain cream cheese to really taste the bagel and it was excellent. Crackly exterior, chewy center, flavorful dough. Lives up to the hype. There are other shops nearby with sandwiches if that’s your lane, but for pure bagel plus schmear, Popup is the play. I’d come back just for the bagels alone. Pro tips • Order online for pickup to skip the line. • Expect a 3-bagel minimum. • Go early for the best selection and to get them hot.

We were there an hour before they close, no queue at all! The staffs were SUPER friendly and helpful. You’re gonna have to choose minimum of 3 bagels and 1 schmear. We choose their most popular one and that is the scallion cream cheese (they also have the limited edition cacio e pepe, maybe i shouldve chosen that one cause..limited edition hehe thought the scallion is great!) The wonderful staffs gave us extra 3 bagels for FREE so we get 6 fluffy hot bagels and 1 cup of schmear for only $13 🫶😭

Not the biggest bagel connoisseur, to me they all taste relatively the same. However, something about this place just hit differently - highlyyyyy would recommend. Somehow the plain salted butter spread was the hit out of all the dips.
