Via Piante Introduce
Introduction / Overview
For those navigating the often-challenging world of gluten-free living in New York City, finding a loaf of bread that doesn't crumble, feel gummy, or taste like cardboard is frequently described as a "miracle." Via Piante, an artisanal bakery founded by a Michelin-trained pastry chef, has turned this dream into a reality for residents of the Upper West Side and Morningside Heights. Operating with the philosophy that gluten-free bread should be held to the same high standards as traditional wheat-based sourdough, Via Piante focuses on ancient grains, long fermentation, and nutrient density to create a product that even non-gluten-free diners find irresistible.
The bakery is the brainchild of Chef Tanya, whose meticulous care and culinary expertise are evident in every crusty loaf and delicate pastry. By utilizing an 18-hour fermentation process and a brown rice sourdough starter, Via Piante achieves a complex flavor profile and a superior "chew" that is notoriously difficult to replicate in gluten-free baking. Unlike mass-produced brands that rely heavily on refined starches and sugars, this bakery prioritizes whole grains like sorghum, buckwheat, and amaranth. The result is a selection of breads and treats that leave you feeling satisfied and nourished, providing a true panetteria experience for the NYC community.
Location and Accessibility
Via Piante operates primarily through a vibrant presence at local farmers markets, with its most iconic home being at the Down to Earth Morningside Park Farmers Market. You can find the stand every Saturday at the intersection of 110th Street and Manhattan Avenue, New York, NY 10025. Nestled right at the corner of Morningside Park, the market serves as a scenic backdrop for a morning of local shopping. This location is a staple for the Morningside Heights and Harlem communities, offering an open-air shopping experience that is both dog-friendly and family-oriented.
Accessibility to the market is excellent for Manhattanites. It is located just a short walk from the Cathedral Parkway–110th Street subway station, served by the B and C lines. Additionally, the 1 train stops at 110th Street and Broadway, providing a convenient cross-town walk through the Columbia University area to reach the park. For those using the bus, the M10 runs directly along Central Park West/Manhattan Avenue, and the M4 and M60-SBS serve nearby Broadway and 125th Street corridors. While the market is outdoors, Via Piante’s dedicated followers know to arrive early, as their popular loaves and seasonal sweets often sell out well before the market closes.

Features / Highlights
What distinguishes Via Piante from the standard gluten-free aisle is a commitment to artisanal integrity and flavor. Key highlights include:
- Michelin-Trained Craftsmanship: Chef Tanya brings fine-dining precision to every recipe, ensuring the textures and aromas rival traditional European bakeries.
- Non-Crumbling Guarantee: Their breads are famous for being sturdy enough for sandwiches and "on the run" meals without falling apart—a rarity in the gluten-free world.
- Ancient Grain Focus: Loaves are built around nutrient-dense grains like millet, sorghum, and buckwheat, resulting in bread with only 5% starch content.
- Sourdough Fermentation: An 18-hour slow fermentation process creates a soft interior crumb and a crisp, crackling exterior crust.
- Diverse Product Line: From savory Pugliese and Potato Rolls to sweet Hazelnut Kiss Cookies and Chocolate Olive Oil cakes, the menu covers the full spectrum of cravings.
- Community Centric: The bakery is a beloved fixture of the Down to Earth Market system, known for personalized customer service and a deep connection to the local food system.

What is Worth Choosing
If you are a first-time visitor to the Via Piante stand, the **Ciabatta d'Avena (Artisan Oat Roll)** is the absolute "must-try" item. Known as their best-seller, this roll features a neutral flavor profile that makes it the perfect vessel for sandwiches, whether you are stuffing it with roasted veggies or fresh seafood. It has the elusive "gluten-free dream" texture: a soft, airy middle protected by a beautifully crisp crust. For those who need a reliable daily bread for toast or peanut butter sandwiches, the **Pullman Loaf (Pancarré)** is worth choosing; it is sturdy, slices perfectly, and never crumbles during the commute.
For fans of more robust, earthy flavors, the **Pugliese di Sorgo** is an incredible choice. This whole-grain artisan roll is inspired by classic Italian breads and pairs exceptionally well with aged cheeses or cured meats. On the sweeter side, do not leave without a pack of **Baci di Dama (Hazelnut Kiss Cookies)**. These small, decadent treats offer a rich hazelnut flavor that perfectly encapsulates Chef Tanya’s Italian-inspired roots. If you are looking for a weekend treat, their **Chocolate & Olive Oil Pound Cake** is a sophisticated, moist dessert that proves gluten-free can be truly indulgent. Pro tip: Since the dough requires 48 hours from start to finish, always place your pre-orders by Wednesday afternoon to ensure your favorites are waiting for you on Saturday morning!

Look forward every Saturday to getting my gluten free baked goods from Via Piante at the Down to Earth Farmer's Market right by Morningside Park. It's the best gluten free bread I've ever had and has the most delicious sweet treats. You can tell, and most importantly, taste that Tanya puts a lot of care into everything she bakes.

I get my Via Piante gluten free ciabatta bread in morningside park at the farmer’s market on Saturdays. It’s an unbelievable product— and currently my favorite sandwich bread. The Pullman loaf pictured — is my second favorite of Tanya’s breads. It’s sturdy yet not dense, for the quick peanubutter sandwiches on the run. It never crumbles which is a gluten free miracle. The pugliese is 👌🏻

Lately I’ve been trying gluten free food and it’s hard to find something that tastes good. Love the taste and the texture of the bread and the cookies have become my daily ritual. Love their little healthy indulgences ❤️🙏

I typically can't eat anything gluten free, but these are so delicious! It's the first time I couldn't tell the difference and really enjoyed a gluten free bread. I'm recommending to my friend who only eats gluten free food. Can't say enough great things-love it!
