PopUp Bagels Introduce
In a city where the bagel is a sacred cultural staple, it takes something truly revolutionary to disrupt the status quo. Enter PopUp Bagels, a culinary phenomenon that has taken the New York region by storm. Located in the heart of Midtown at 139 E 57th Street, this isn't your grandfather’s corner deli. PopUp Bagels has stripped away the traditional deli experience—no toasters, no deli meats, and no egg sandwiches—to focus exclusively on one thing: the perfect, piping-hot bagel. What started as a pandemic-era backyard project in Connecticut has evolved into a viral sensation, earning the title of "Best Bagel" at Brooklyn BagelFest two years in a row and attracting a star-studded list of investors and fans. For New Yorkers living in the 10022 area and beyond, PopUp Bagels offers a unique "Grip, Rip and Dip" ritual that emphasizes the freshness and texture of a bagel served straight from the oven.
The atmosphere at the 57th Street location is electric and fast-paced, mirroring the energy of the surrounding Midtown corridors. Unlike traditional shops where bagels might sit in bins for hours, PopUp Bagels operates on a "hot and whole" philosophy. Trays of steaming bagels are pulled from the oven every few minutes, ensuring that every customer receives a product that is literally too hot to handle without its protective brown paper bag. The shop itself is sleek and minimalist, designed for a modern "grab-and-go" experience. While the lines often stretch down 57th Street, especially on weekend mornings, the efficiency of the staff and the intoxicating aroma of fresh yeast and toasted seeds make the wait a fundamental part of the NYC foodie experience. For local users, it represents a shift from the utilitarian breakfast sandwich to a communal, interactive dining event.
Location and accessibility are major draws for this Midtown East outpost. Situated at 139 E 57th St, New York, NY 10022, the shop is perfectly positioned at the intersection of luxury shopping and corporate Manhattan. It is highly accessible via public transportation, located just steps away from the Lexington Ave/59th St station, serving the 4, 5, 6, N, R, and W trains. This makes it an ideal stop for commuters heading into the office or for locals starting a weekend walk toward Central Park, which is only a few blocks to the west. Its central location means it serves a diverse crowd, from neighborhood residents to Broadway-bound tourists, all drawn by the promise of a bagel that "lives up to the hype."
PopUp Bagels offers a curated set of services that distinguish it from the standard New York bagel model. By focusing on a limited menu, they ensure every item is executed with precision. Their services include:
- Fresh-baked bagel service with a minimum order of three bagels, encouraging sharing and freshness.
- "Grip, Rip and Dip" experience: Bagels are served whole (never sliced or toasted) with a side of gourmet "schmear" or artisanal butter.
- Weekly rotating "Schmear" program: Every Wednesday, the shop introduces a new specialty cream cheese and butter flavor.
- Advanced pre-ordering system: Customers can reserve their time slots and bagel quantities online to avoid the longest lines.
- Corporate and event catering: Large-format boxes and "Brunch Packs" designed to serve groups of 6 to 30 people.
- Premium beverage selection: High-quality coffee, cold brews from La Colombe, and fresh-squeezed juices from Natalie’s.
- Vegan and dairy-free options: A weekly rotating vegan schmear ensures all dietary preferences are catered to.
The features and highlights of PopUp Bagels are centered on the unique texture of their product and the creativity of their toppings. This isn't just a bagel; it's a "bread event." Key highlights include:
- Dual-Texture Mastery: The bagels are famous for having an impossibly thin, crispy exterior shell and a light, airy, almost pillowy interior.
- No-Slicing Policy: By keeping the bagel whole, the steam is trapped inside, maintaining the heat and "magic" until the moment it is ripped open.
- Gourmet Collaboration Schmears: Previous flavors have included inventive options like Grillo’s Pickle cream cheese, Truffle butter, and honey brown butter.
- Small-Batch Baking: Bagels are baked in small quantities every five minutes, guaranteeing the freshest possible product at all times of the day.
- Celebrity Endorsed: With investors like Paul Rudd and Michael Phelps, the shop has become a frequent "must-visit" on the Manhattan celebrity circuit.
- Award-Winning Pedigree: Back-to-back winners of the "Best Bagel" award (2021, 2022) as judged by New York bagel experts.

Knowing what is worth choosing at PopUp Bagels is the secret to a perfect visit. For first-timers, the "Plain" bagel is actually a top recommendation; without the distraction of seeds, you can truly appreciate the pure, classic flavor and the incredible contrast between the crispy crust and soft crumb. However, among the seeded varieties, the "Poppy" bagel is a local favorite because the tiny seeds add an extra layer of crunch that complements the fluffiness of the bagel perfectly. The "Everything" bagel is a flavor bomb for those who want the full sensory experience, though be prepared for a generous amount of salt and garlic.
In terms of spreads, the Jalapeño cream cheese is a revelation; it captures the bright, fresh flavor of the pepper without being overwhelmingly spicy. For those visiting during a specialty week, keep an eye out for the Salted Butter or the Scallion cream cheese—the latter is a masterclass in balance, being powerfully oniony yet tangy and fresh. Because the menu rotates every Wednesday, it is always worth asking the staff for the "Special of the Week." Whether you're taking a dozen back to the office or ripping into a 3-pack on a park bench, PopUp Bagels provides a high-quality, memorable New York experience that proves some traditions are meant to be playfully challenged. It is a must-visit destination for anyone looking to raise their bagel standards in the greatest bagel city in the world.

Fantastic light and airy bagel worthy of ripping and dipping. From the different bagel varieties, the plain is the best first-try but I prefer the poppy over the sesame or the everything. Among those three, the poppy has the texture difference that best fits with the fluffiness of the bagel. I also want to shout out the jalapeno cream cheese. Somehow the cream cheese tasted just like a jalapeno without being spicy. Crazy good. The regular cream cheese is good but the jalapeno cream cheese is a surprise. The aroma of this place is impressive, especially at 7am when the air is fresher. I highly recommend going early if you can just to smell the aroma.

I’m from Seattle, and this was my very first time trying Popup Bagels in New York—and wow, it completely lived up to the hype! The bagels are absolutely incredible—crispy on the outside, soft and perfectly chewy inside. I tried the plain, salt, sesame, and everything flavors, and honestly, each one was outstanding. The plain had that pure, classic flavor that really lets the texture shine. The salt had just the right punch without being overwhelming. The sesame was fragrant and nutty, and the everything was a flavor bomb with the perfect balance of toppings. On top of the amazing food, the customer service was the best—friendly, welcoming, and fast. The staff really made the experience even more enjoyable. Popup Bagels has officially raised my bagel standards. A must-visit in NYC if you’re looking for the perfect bagel and top-notch service! Thank you 😊

I lovvvveee their salt bagel with the scallion schmear 🤍 So good. I do wish they offered smaller portions of schmear so you could try more flavors in one visit.. but that just gives me an excuse to go back to New York and try more sooooon. The staff were all very friendly and efficient, even though the place was super busy.

Fresh hot bagels that were extremely flavorful. I wish that there was a counter or a place to enjoy your bagel inside but there isn’t, instead a couple stools and no room to comfortably eat. I awkwardly ate using the stool as my table. It’s 100% a takeaway and enjoy at home type of place.

We were fortunate to have bagels that just came out of the oven! Always a line here. Love the cream cheese offerings. I should say they're the best bagels in town! We definitely enjoyed our breakfast that day...
